as far as i know, everyone is open to everything, but certain classes have an affinity for certain things
like rogues are good with archery and dual wielding
warriors are good with two handing and Sword and Board

As above. The only real limitation in the game is the Dwarves can't be mages.
Rogues are better suited for archery, though.
